At Pyewacket's Shrub Factory and Shop in Ballina, Northern New South Wales, they craft their products the old-fashioned way. Slow fermentation and no pasteurization to ensure their creations retain their natural vitality. The result is an array of mouthwatering beverages with roots that trace back through history.



What is a Shrub?

These cold-pressed fruit concoctions fermented in organic apple cider vinegar add a zing to your drinks. The term 'shrub' hails from an old English word for fruit and vinegar preserves, likely derived from the Arabic word 'sharab,' meaning 'to drink.' Shrubs were favored in colonial America, used both in cocktails and as a non-alcoholic alternative during the prohibition era.

THE TEAM

Meet Genna and Katrina, the two passionate minds behind Pyewacket's, a brand dedicated to reviving traditional plant-based drinks, tonics, and tinctures. Their journey is a testament to the love for slow food, real ingredients, and a sustainable approach.

Genna and Katrina's mission is simple yet powerful. They aim to reintroduce the world to the long-lost memory of genuine, natural flavors. Their commitment to providing real nutrition and functional benefits is unwavering. But, they don't stop there. Sustainability is at the core of their philosophy, utilizing abundant, often wasted, local resources.

Genna and Katrina describe themselves as "Two women with a love for the long road and a good tipple." They bring their extensive knowledge and a genuine passion for slow food and real ingredients to every bottle they produce. Their shrubs and tonics are slow-fermented and unpasteurized, preserving the authenticity of traditional beverages.


The Pyewacket’s Philosophy

Every Pyewacket’s product is made from real plants, no extracts, flavors, or colors, even 'natural' ones. Sustainability is a key focus, reducing food waste one "ugly" apple at a time. Their packaging is free from single-use plastics, and they contribute 1% of their sales to 'Pay The Rent,' supporting First Nations organizations.

Nutrition and Health Benefits

Pyewacket’s Traditional Shrubs use a method dating back to the Middle Ages. Fresh seasonal fruits and herbs are preserved through fermentation in vinegar, resulting in nutritionally dense and delicious cordials. Their Cider Tonics support the immune, adrenal, and digestive systems, infused with a blend of locally-sourced ingredients.
